Pumpkin Apple Harvest Rice

Ingredients

  • 1.75 cups brown rice, cooked
  • 1 cup canned pumpkin
  • 2 Tablespoons maple syrup
  • 1.5 Tablespoons apple cider vinegar
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 3/4 cup apples, diced but not peeled (preferably Honeycrisp, Fuji or McIntosh) (Serving Day)
  • 3/4 cup onions, diced
  • 2 Tablespoons raisins
  • 1/2 cup walnuts, chopped
  • 1 Tablespoon parsley flakes
  • 2 Tablespoons olive oil
  • 1/8 teaspoon salt

Preparation

Step 1

Cook rice according to the package directions. Combine pumpkin, syrup, vinegar, pepper and cinnamon in a small bowl. Mix with brown rice. Add remaining ingredients to rice mixture. Serve warm or keep in warm oven until ready to serve.
Freezing Directions:

Combine pumpkin, syrup, vinegar, pepper and cinnamon in a small bowl. Place in a freezer bag. Place rice in a freezer bag. Add remaining ingredients to another freezer bag. Keep bags together and affix label. TO SERVE: Warm rice through. Let pumpkin mixture and apple mixture get to room temperature or heat for a few seconds in microwave. Mix everything together. Serve warm.
