Stuffed Zucchini

Ingredients
- 3 zucchini, 6-8" long
- 1 c. mushrooms, chopped
- 2 tbsp. onions, finely chopped
- 2 tbsp. margarine
- 2 tbsp. flour
- 1/2 tsp. salt, optional
- 1/2 tsp. oregano
- 1 c. (4oz.) mozzarella or provolone, shredded
- 2 tbsp. nonfat plain yogurt
- fresh ground pepper

Preparation
Step 1
Cut zucchini in half lengthwise. Cook in boiling water 4-5 mins. or till tender crisp. Remove pulp, leaving a 1/4" shell; chop pulp.
Saute mushrooms and onions in margarine. Stir in flour, seasonings. Turn off heat.
Stir in cheese, yogurt, pepper, and chopped zucchini. Fill shells. Broil 4-5 mins. or till cheese melts. Zucchini can be prepared to this step, covered, and refrigerated to bake later, if desired. Broil 5-7 mins.
