Pumpkin Spice Oatmeal Cookie Cups

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 cups Quick Oats
  • 24 Pumpkin Spice Hershey’s Kisses, unwrapped (have a few extra, just in case)

Preparation

Step 1

1.Preheat oven to 350F. Spray two mini muffin mans (24 total cavities) with cooking spray. I like using the kind with flour, to ensure they do not stick.
2.Cream butter and sugars in the bowl of an electric mixer fitted with a paddle attachment. Beat in egg and vanilla. Mix in baking soda and cinnamon. Slowly beat in flour. Mix in oats.
3.Scoop balls of dough into prepared pans. I used about 1 to 1-1/2 tablespoons of dough per muffin cavity. Press gently into pan.
4.Bake for about 10-11 minutes, until the tops are golden. As soon as you remove the pans from the oven, press one Kiss into each cookie. Let cool completely before moving the pans. If you move the pans too much while the Kisses are melty, they will collapse. Once the Kisses have re-hardened, remove cookies from pan.

Notes
Use Caramel Kisses, or your favorite flavor to change up the cookie!
