Salmon Burgers w/Lemon-Basil Mayo

Ingredients

  • 2 ears of corn
  • 1 # skinless salmon fillet
  • 3 green onions, thinly sliced
  • 1 egg white
  • 1/4 c plain bread crumbs
  • 3/4 tsp salt
  • 1/2 tsp finely grated lemon peel

Preparation

Step 1

1. Cut kernels off corn and place in lg. bowl.

2. Finely chop salmon and add to bowl. Gently mix in onions, egg white, 1/4 c bread crumbs, salt, lemon peel.

3. Shape into 4 patties and dredge in 1/4c bread crumbs and spray with cooking spray

4. Grill 6 to 8 min. or until cooked through

5. In sm. bowl mix 1/4c mayo, 1 T chopped basil, and 1/2 tsp finely grated lemon peel.

6. Serve burgers on 4 buns with Bibb lettuce and lemon-basil mayo
