Baked Eggplant with Garlic Cumin Vinaigreete, Feta & Herbs

Ingredients

  • 1 clove minced garlic
  • Kosher salt
  • 1 1/2 T lemon juice
  • 1 small finely diced shallot
  • 3 T olive oil
  • 1/2 t cumin seeds. lightly toasted & ground
  • Pinch of cayenne
  • 1 large eggplant, cut 1/2" thick
  • 1/4 C crumbled Feta cheese
  • 2 T coarsely chopped mint
  • 2 T coarsely chopped cilantro

Preparation

Step 1

Mix garlic & pinch of salt to a paste. In small bowl, combine garlic paste & 1 T lemon juice; let sit for 10 min. Combine shallot with remaining lemon juice & pinch of salt in another bowl, let sit 10 min. Whisk olive oil, cumin & cayenne into garlic mixture. Season with more salt or cayenne if needed/
Prepare grill. brush both sides of eggplant with oil & season with salt. Grill tip golden brown, 3-4 min. Turn & grill other side, 3-4 min.
Top grilled eggplant slices with shallots, feta & herbs. Whisk vinaigrette & drizzle on top.
