  • 2 acorn squash
  • Salt & pepper
  • 6 T olive oil
  • 1 clove minced garlic
  • 1 1/2 T lime juice
  • 1 t chili powder
  • 2 T cilantro

Preparation

Step 1

Preheat oven 450.
Halve squash & scoop out seeds. Cut into 1/4" wedges. Toss with salt & pepper & 2 T oil.
Roast 25-35 min.
Meanwhile heat remaining 1/4 C oil & sauce garlic, add cilantro & lime juice. Remove from heat & pour over squash and serve.
