Grilled Pineapple Pork

Ingredients
- 4 boneless pork loin chops, center cut, 1" thick
- kosher salt
- pepper
- 2 Tbsp. dijon mustard
- 1/4 cup honey
- 1 cup canned crushed pineapple
- 2 Tbsp. vegetable, canola or peanut oil

Step 1
1- Season pork with salt and pepper on all sides. In a small bowl, whisk together mustard, honey and pineapple. Reserve 1/2 cup for brushing. Pour remaining marinade into a resealable plastic bag and add pork. Toss to coat on all sides, then seal and marinate in refrigerator for 2 hours.
2-heat a grill or grill pan to medium-high heat and brush with oil. Remove pork from bag and shake off excess marinade.
3-Place pork on the grill and cook 4 minutes per side or until desired doneness, flipping only once and brushing with reserved marinade. Transfer to a plate, cover loosely with foil and let rest 10 minutes before serving.
