Ingredients

  • Mix Together:
  • 2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon salt
  • Mix and add dry ingredients:
  • 2 cups sugar
  • 1 1/2 cup oil
  • 3 eggs
  • 2 cups grated carrots
  • 1 can crushed pineapple (remove some liquid)
  • 1 cup coconut
  • 1 cup chopped walnuts
  • Fold in one at a time then add 1 teaspoon vanilla.

Step 1

Bake in a 13 x 9 pan, well greased and floured, 45 to 50 minutes at 350 degrees.

Cream Cheese Frosting
¾ box powdered sugar
8 ounce cream cheese
1 stick margarine
1 teaspoon vanilla

Frost cake when cooled.
