Ingredients
- Mix Together:
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1 teaspoon salt
- Mix and add dry ingredients:
- 2 cups sugar
- 1 1/2 cup oil
- 3 eggs
- 2 cups grated carrots
- 1 can crushed pineapple (remove some liquid)
- 1 cup coconut
- 1 cup chopped walnuts
- Fold in one at a time then add 1 teaspoon vanilla.

Step 1
Bake in a 13 x 9 pan, well greased and floured, 45 to 50 minutes at 350 degrees.
Cream Cheese Frosting
¾ box powdered sugar
8 ounce cream cheese
1 stick margarine
1 teaspoon vanilla
Frost cake when cooled.
