Ingredients
- Lemon Loaf Cake
- 1 1/2 cups AP Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 3 Eggs, Room Temperature
- 1 cups Sugar
- 2 TBSP Butter, Room Temperature
- 1 tsp Vanilla Extract
- 1 tsp Lemon Extract
- 1/3 cup Lemon Juice
- 1/2 cup Vegetable Oil
- Lemon Zest, Divided
- Icing
- 1 cup Powdered Sugar, Plus 1 TBSP
- 2 TBSP Milk
- 1/2 tsp Lemon Extract
- Lemon Zest

Preparation
Step 1
Combine flour, baking soda, baking powder and salt in a bowl.
Using a mixer, blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice.
Pour wet ingredients into the dry and blend until smooth.
Add oil and 1/2 the Lemon Zest and mix well.
Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350° for 45 minutes, until done.
Combine first three icing ingredients in a small bowl with an electric mixer on low speed. Add remaining Lemon Zest by hand.
Pour icing over cooled cake. Let icing set before serving.
