Almond Peach Muffins

Ingredients
- 1 1/2 cups flour
- 1 cup sugar
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla
- 1/8 teaspoon almond extract
- 1/2 cup chopped almonds
- 1 1/4 cups chopped and peeled fresh peaches or 16-ounce can peaches, drained and chopped

Preparation
Step 1
Grease or line muffin cups.
Combine flour, sugar, salt and baking soda.
Beat together eggs, oil, vanilla and almond extract. Add to dry ingredients. Add almonds and peaches.
Fill prepared muffin cups 3/4 full. Bake at 375 degrees for 20-25 minutes. Cool 10 minutes.
Makes 12
Can freeze.
