Grilled Garlic Potatoes

  • 2 to 3 large baking potatoes
  • 15 large garlic cloves, peeled
  • 1 large onion, chopped
  • 1/2 cup olive oil
  • fresh basil (chopped)
  • fresh oregano
  • fresh thyme
  • fresh rosemary
  • 2 bay leaves
  • coarsely ground black pepper
  • garlic salt


Servings 6


Step 1

Scrub potatoes, but leave skins on. Cut each potato in half, then cut each half into 6-8 wedges. Rinse in cold water and pat dry. Put potatoes, onion, garlic, herbs, and bay leaves into roasting pan. Pour olive oil over to coat. Smoke or grill potatoes until tender. Turn occasionally with spatula. Season with salt and pepper before serving.

NOTE: use a roasting pan large enough so that potatoes do not overlap in order to achieve desired crispness.
