Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup vegetable oil
- 3/4 cup applesauce
- 3 eggs
- 2 cups finely grated carrots
- 2 teaspoons vanilla extract
- 8 ounces well drained crushed pineapple 1 can
- 1 cup shredded coconut
- 1 cup chopped walnuts or pecans

Step 1
In a mixing bowl, combine dry ingredients; stir to blend. Add eggs, oil,applesauce, shredded carrots and vanilla; beat until well blended. Stirin pineapple, coconut and walnuts. Pour into a greased and floured13x9x2-inch baking pan.
