Black bean & cauliflower burritos

Ingredients
- 2 cups cooked Cauliflower (small pieces chopped)
- 2 cans Black beans, drained & rinsed
- 1 cup Onions, chopped
- 1 Bell Pepper (red, yellow or green), thin slices
- 2 cloves Garlic, minced
- 1 tomato, chopped into small pieces
- 1 Avacado, medium, sliced thinly
- 10 Whole Wheat Tortillas
- 2-4 Tbsp Chunky Salsa, or as desired
- water

Preparation
Step 1
Place onions, garlic, and cauliflower in large fry pan with water.
When onions are translucent, add black beans. Then, using a potatoe masher, mash the mixture until consistency of chunky mashed potatoes. (add water mixed with a little salsa if needed for proper consistency).
Then place small amount of mixture on one end of tortilla, place a few tomatoes, some salsa, a couple slices of bell pepper and 1-2 thin slices of avacado over mixture.
Wrap burrito style.
