Grammie's English spiced roasted parsnips and carrots

Ingredients

  • 2 # peeled carrots
  • 1 1/2 # peeled parsnips
  • 3 T olive oil
  • 2 T butter
  • 1 1/2 t ground cumin
  • 1 t salt
  • 1/2 t black pepper

Preparation

Step 1

Preheat oven to 450 and lightly grease a baking sheet. Cut parsnips and carrots into 3" sticks. Place the cumin, salt and pepper in a dish and dip the sticks into the oil then into the spices coating well. Lay as evenly as possible in a single layer along the bottom of the prepared baking sheet. Melt the butter and pour over the carrots and parsnips. Bake for 30 minutes or until carrots and parsnips are fork tender and slightly browned.
