Devilish Carrots

  • Topping:
  • 4 c. carrots (shredded)
  • 3/4 c. mayonnaise
  • 1 small onion, choppd (sweet or red )
  • 1/2 c shredded cheddar cheese
  • 3 tbsp prepared horseradish
  • 1/4 tsp sugar
  • Season with salt and pepper
  • 12 saltine crackers, crushed
  • 3 tbsp butter
  • 2 tbsp chopped parsley

Cooking time 50mins


Step 1

Cook carrots and drain. While carrots cook, melt butter and toss with crushed crackers. Mix mayonnaise, onion, cheese, horseradish, salt pepper, and sugar together. Add carrots. Pour int buttered 2 quart casserole. Top with buttered cracker mixture. Bake at 350 degrees for 30 minutes. Sprinkle with chopped parsley and serve.
