Pumpkin French toast

  • 4 large eggs
  • 4 T mashed or pureed pumpkin
  • 1/2 t pumpkin pie spice
  • 4 slices white or wheat bread
  • 2 t butter
  • Maple syrup or powdered sugar for topping

Step 1

Blend eggs,pumpkin, and pumpkin pie spice well in low bowl.

Dip each slice of bread quickly into and out of the egg mixture on both sides.(too long in the liquid makes it soggy)

Melt butter in skillet or on a griddle.

Cook over medium high heat until golden brown on both sides.

Top with your desired topping and serve warm
