Ingredients

  • 1 *1 cup white sugar
  • 1/2 *1/2 cup shortening
  • 1 *1 egg
  • 1 *1 cup milk
  • 2 *2 cups flour
  • 1/2 *1/2 teaspoon salt
  • 2 *2 teaspoons baking powder
  • 1 *1 teaspoon vanilla
  • 1-1/2 *1-1/2 cups blueberries

Step 1


Cream shortening and sugar; add egg. Mix well.
Mix together flour, salt, and baking powder; add to creamed mixture alternately with milk. Mix well. Add vanilla. Fold in blueberries carefully.

Fill greased or papered muffin cups. Bake at 400° for 15 – 20 minutes. Should make about 1 dozen.


Note:
If using frozen berries, do not defrost - they will turn your batter a very unappealing blue if you do.
