Blueberry Port Reduction
- 1 1/2 cups Port
- 1 cup beef broth
- 1 cup blueberries, fresh or frozen
- 1 shallot or 1/2 medium onion
- 2 tsp sugar or 1 tsp sun crystals
- 1 tsp finely chopped mint (thyme or rosemary)
- 1 garlic clove (optional)
Cooking time 60mins
1. In a medium sauce pan, stir together all ingredients except mint.
2. Bring to a boil over high heat.
3. Reduce heat to medium and boil, stirring occasionally until reduced to 1/2 cup.
4. Stir in mint and serve warm.
