Lemon Pancakes with Blueberry Sauce

Ingredients

  • 1 1/2 cups frozen blueberries
  • 1/4 cup sugar
  • 2 tsp fresh lemon juice
  • 1/2 cup sour cream
  • 1 tbsp unsalted butter, melted
  • 1 egg
  • 1 tbsp grated lemon zest
  • 1/2 cup fresh lemon juice
  • 1/3 cup milk
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 tbsp granulated sugar

Step 1

For sauce, boil berries with sugar and juice untill berries are softened. Add 1/2 tbsp cornstarch in 1 tbsp water to thicken, if desired. Strain.

For pancakes, combine wet ingredients and zest in bowl and beat well. Add dry indredients and stir gently. Add a bit more milk if too thick.

Make small pancakes and cook 3-4 min. per side. Serve with sauce and icing sugar.
