SHRIMP BASIL AND TOMATOES OVER PASTA

Ingredients

  • 10 ounces linguine
  • 6 ounces extra-virgin olive oil
  • 1 pound fresh large shrimp
  • 2-4 cloves garlic, minced
  • 2-3 tomatoes, diced
  • 12 fresh basil leaves, finely sliced
  • salt & pepper to taste
  • basil leaves for garnish

Preparation

Step 1

1. Cook pasta in boiling water until tender, 5-6 minutes.
2. Heat a large saute pan, add1 ounce of olive oil. Add shrimp and cook 2-3 minutes over high heat; add garlic and cook about 1-2 minutes more. Add tomatoes and basil, let simmer for about 5 minutes, remove from heat and add remainder of olive oil, salt & pepper to taste.
3. Drain pasta, toss with sauce, garnish with basil leaves.
