Ingredients

  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 1/4 cups dried cranberries
  • 3 large eggs, beaten
  • 1 1/4 cups buttermilk
  • 1/3 cup unsweetened apple sauce
  • 2 tsp finely grated orange zest
  • 1/4 cup orange juice
  • 1/2 tsp vanilla

Step 1

Preheat oven to 375 degrees.
Combine flours, sugar, baking powder, salt and nutmeg. Mix in dried cranberries.
Place the eggs in a second bowl and beat until the yolks and whites are well blended. Mix in the buttermilk, apple sauce, orange juice and zest, and vanilla. Stir the wet ingredients into the dry ingredients until just combined.
Fill muffin cups and bake for 20 minutes or until they spring back when gently touched in the centre.
