Ingredients
- 1 boneless 2 lb pork loin roast
- 6 cloves garlic, minced
- 1 tsp crushed dried rosemary
- 1 tsp thyme
- 1 tsp pepper
- 1/2 salt
- Vegetable cooking spray

Step 1
Trim fat from roast. Combine garlic and next four ingredients in a small bowl; mash into a paste. Rub paste over surface of roast. Tie roast with string at 2-3 inch intervals. Place roast on a rack coated with cooking spray and place rack in a shallow roasting pan. Insert a meat thermometer into the thickest portion of roast. Bake at 400 for 1 hour or until meat registers 160. Let stand 10 minutes; remove string and cut roast into thin slices.
