Mango-Ginger-Blueberry Crisp

Ingredients

  • 3 mangoes, peeled and chopped into chunks
  • 2 cups blueberries
  • The juice of 1/2 a lemon
  • 2 tbsp of white whole-wheat flour
  • 2 tbsp sugar
  • 1 tbsp grated ginger
  • Pinch of salt
  • Topping
  • 1.5 cups old-fashioned rolled oats
  • 1/2 cup toasted wheat germ
  • 3/4 tsp salt
  • 1.5 tsp cinnamon
  • 1/2 cup light brown sugar
  • 1/3 cup canola oil
  • 1/3 cup maple syrup

Preparation

Step 1

Pre heat oven to 350.

In a large bowl combine mango, blueberries, lemon juice, and ginger. Sprinkle in sugar and flour and lightly toss everything together. Pile fruit mixture into a 9x9 glass Pyrex dish.

In a separate bowl, mix together the ingredients for the topping and spread over the mango-blueberry mixture.

Pop in the oven for 35-40 minutes. Enjoy!!
