Spinach Salad with Hot Bacon Dressing

Ingredients

  • 4 pieces bacon, chopped
  • 2 tbsp. cider vinegar
  • 2 tbsp. water
  • 1 tbsp. sugar
  • 1 beaten egg
  • 1 bag washed spinach, torn into bite-size pieces

Preparation

Step 1

Fry chopped bacon in non-stick skillet, when cooked through, but still
tender, reduce heat to low and add vinegar mixture with whisk. Slowly add
beaten egg while continuing to whisk. Cook for 1 minute more, until slightly
thickened. Toss with spinach and serve.
