Ingredients

  • 8 Roma tomatoes, cored and lightly brushed with olive oil
  • 2 jalapenos
  • 1 red onion, halved, root intact
  • 1 cup fresh cilantro leaves
  • 3 Tbsp fresh lime juice
  • salt and black pepper to taste

Preparation

Step 1

Preheat grill to medium. Brush grill grate with oil.
Grill tomatoes until lightly charred and softened, about 4 minutes. Grill jalapenos and onion until blistered, charred and softened, about 12 minutes. Let vegetables cool slightly. Gently remove skin and tem from jalapenos and root from onion; transfer to a food processor.
Pulse tomatoes, jalapenos, onion, cilantro and lime juice until coarse; season with salt and black pepper.
