JALOPENO CORNBREAD MUFFINS - Kathy Little

Ingredients

• 1 ) 2 packages Jiffy cornbread mix
• 2 ) 1 can cream style corn
• 3 ) 1 pound R.B. Rices sausage (medium)
• 4 ) 1 medium onion, chopped
• 5 ) 3 Jalapeños chopped real fine (remove seeds)
• 6 ) 2 eggs
• 7 ) 1 can green chilis (4 oz)
• 8 ) 1 cup cheddar cheese

Preparation

Step 1

Fry sausage and chopped onion together until done. Mix all ingredients together. Spoon in 10 muffin tins. Bake 20-25 minutes.
