Ingredients
- 1 Tablespoon finely chopped shallot
- 1 teaspoon minced Serrano chile
- 1-1/2 1-½ tablespoons white wine vinegar
- 1-tablespoon fresh limejuice
- 1-tablespoon sugar
- Kosher salt to taste
- 1/3-cup safflower oil
- 1 Small jicama, peeled and julienned
- 1 carrot, peeled and julienned
- 1/4 ¼ small head red cabbage, finely shredded

Preparation
Step 1
In a small bowl, whisk together shallot, chile, vinegar, limejuice, sugar and salt. Whisk in the oil. Set the mixture for about 10 minutes to allow the flavors to blend. Taste and adjust the seasoning.
In a bowl, combine the jicama, carrot, and cabbage. Toss thoroughly to distribute the ingredients evenly. Add the dressing, toss, and serve.
