Pumpkin Cranberry Bread

Ingredients
- 2 1/4 cups flour
- 1 TBSP pumpkin pie spice
- 2 TBSP baking powder
- 1/2 tsp salt
- 2 eggs
- 2 cups sugar
- 1 3/4 cups pumpkin puree
- 1/2 cup vegetable oil
- 1 1/2 cups cranberries, fresh, frozen or dried

Step 1
Combine flour, pumpkin pie spice, baking powder and salt in large bowl. In small bowl combine eggs, sugar, pumpkin and oil, beat until just blended. Add to flour mixture, stir until just moistened. Fold in cranberries.
Spoon batter into two greased and floured 9x5 loaf pans. Bake at 350 degrees for 55-60 minutes. Remove from oven and cool in pans 5-10 minutes. Remove to wire rack and cool completely.
Makes nice large loaves if you double and bake in three loaf pans.
