Lemon Bars

I've never before (or since this recipe) been drawn to lemon desserts, but this one is absolutely irresistible to me!

It also keeps very well in the refrigerator.

Ingredients

  • CRUST:
  • 1 cup salted butter, softened
  • 1/2 cup sugar
  • 2 1/3 cups whole wheat flour
  • CUSTARD:
  • 6 eggs
  • 1/3 cup all purpose flour (do not use whole wheat unless you don't mind altering the beautiful light yellow color of the bars)
  • 1 1/4 cup sugar
  • 2/3 cup freshly squeezed lemon juice
  • Zest from 2 lemons
  • Powdered sugar to sprinkle on bars before serving (optional)

Preparation

Step 1

1. In a 9 by 13 inch baking dish, blend together the crust ingredients. I've found that it works best by first using a large wooden spoon, and then a pastry cutter.
2. When evenly blended, lightly press down the crust ingredients into the pan. Bake at 350 degrees for about 25 minutes, or until golden brown.
3. In a medium bowl, beat together the eggs and flour, Add in the remaining custard ingredients.
4. Pour the custard onto the crust and bake for 30 minutes.
5. Optional: sprinkle with powdered sugar just before serving (the sugar will get absorbed into the custard in a short amount of time)
