Peach-Mango Salsa with Pita Chips

  • 1 c chopped grape tomatoes
  • 1 sm mango, chopped
  • 3/4 c grilled peaches
  • 1/3 med bell pepper, finely chopped
  • 1/2 c sm onion, chopped
  • 1/4 c cilantro leaves, chopped
  • 1 jal.apeno chili pepper, chopped
  • juice of 1 lime
  • 1 T red wine vineegar
  • 1 T honey
  • 1 T orange juice
  • 1/8 t salt
  • 3 whole wheeet pitas, cut into 8 wedges and pelled apart
  • 1 t salt-free garlic and herb seasoning blend



Step 1

Preheat oven to 350.
Combine tomatoes, mango, peaches, bell pepper, onion, cilantro and chili pepper in medium bowl. Whisk lime juice, vinegar, honey, oj, and salt in small bowl. Add to tomato mixture and stir. Chill.

Place pita wedges on large baking sheet and coat lightly with cooking spray. Sprinkle wedges with seasoning blend. Bake 5 to 6 minutes or until edges just start to brown.
