Ingredients
- 1-½ lb. halibut steaks, about ¾ inch thick
- 500ml Tomato Salsa Sauce
- 1/3 cup finely diced cucumber
- 1/3 cup finely diced sweet red pepper
- 2 tbsp. finely diced red onion
- 1 small ripe tomato, finely diced
- 2 tsp Red wine vinegar
- 2 tsp chopped fresh coriander (optional)
- Dash hot pepper sauce
- ½ tsp. olive oil
- Salt and pepper to taste

Tomato Salsa sauce: In Bowl, combine cucumber, red pepper, onion, tomato, vinegar, coriander (if using), hot pepper sauce, and oil; stir to mix. In food processor, puree half of the salsa mixture; combine with remaining salsa,
On greased grill over medium heat or in broiler, grill fish, turning once, for about 4 minutes on each side or until fish flakes easily. Place on serving platter or plates and spoon salsa over.
Makes 4 servings (1 ¼ cups/300ml sauce)
