Dijon Mustard Pork Tenderloin and Roasted Butternut Squash

This is a terrific fall/winter entree. Make sure you use a good quality Dijon mustard and lots of fresh cracked pepper on the tenderloin. Serve with a salad of mixed greens and a light vinaigrette.

- 1 pork tenderloin
- 1-2 TBSP Dijon mustard
- 2 TBSP fresh cracked pepper
- 1 large butternut squash, peeled cut into bite-sized pieces
- 1 large onion cut into chunks (about the same size as the squash)
- 1-2 TBSP olive oil
- ½ tsp salt

Step 1
Preheat oven to 375 degrees. Rub or baste pork tenderloin in Dijon mustard. Then rub in cracked pepper. Place tenderloin in center of the cookie sheet. Place squash and onion in a large bowl and toss with olive oil, salt and pepper. Spread squash/onion mixture on cookie sheet around the tenderloin. Roast in oven for 40 minutes or until internal temperature reaches 170 degrees.
