Zucchini Cakes

Ingredients

  • 2 zucchini, grated
  • 1 egg, beaten
  • 2 tbsp butter, melted
  • 1 cup bread crumbs
  • 1/4 cup onion, chopped fine
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • Salt/pepper to taste
  • 1/4 flour
  • Oil for frying

Preparation

Step 1

Heat oil over medium temperature.

In a large bowl, combine zucchini, egg, butter, bread crumbs, onion and spices. Mash together with fingers until mixed well. The mixture will be thick and sticky.

Take a portion of the mixture and shape into a disk, much like you would shape a hamburger patty. Dredge the patty in the flour. Fry the patty in the oil until golden brown on each side. Repeat with the rest of the zucchini mixture.
