Lemon Pistachio Wreaths

Ingredients

  • 1 cup flour
  • 3/4 cup and 1 tbs. cornstarch
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter, softened
  • 1/2 cup and 1 tbs. sugar
  • 2 egg yolks, at room temperature
  • 5 tsp. finely grated lemon zest
  • 2 tbs. fresh lemon juice
  • 1 tsp. vanilla
  • 1 3/4 cup icing sugar
  • 1 1/2 cps shelled pistachios (toasted and coarsley chopped)

Preparation

Step 1

Whisk flour, cornstarch, baking powder, and salt in a bowl and combine. Set aside.

Cream the butter and sugar until light and fluffy. Mix in the yolks, zest, and vanilla. Slowly add the flour mix until mixture comes together. Shape dough into a disk and chill 1 hour.

Roll dough on a lightly floured surface and cut out wreaths with a 2 1/2 inch flutted cutter, then with a 7/8 round cutter, cut out the centers. Chill cookies 15 minutes.

Bake in 350 degree oven. When cool, combine the lemon juice and icing sugar. Dip the cookies into the glaze and then sprinkle with nuts.
