Ingredients

  • 2 lb. shrimp (bay), cooked
  • 1 cup fresh lime juice
  • 2 cups cherry tomatoes, chopped
  • 1/2 cup white onion, minced
  • 4 fresh jalepeno chilies, seeded and minced
  • 1 bunch cilantro leaves, chopped
  • 3 avocados , diced
  • 1/4 cup capers, rinsed and drained
  • 1/2 cup cucumbers, peeled and diced
  • 1/2 cup ketchup
  • 2 T. red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 t. salt
  • Garnish with Lettuce and Chips

Preparation

Step 1

Marinate cooked shrimp for 1 hour in lime juice. Pour off lime juice and discard. Add remaining ingredients to shrimp and toss lightly. Then serve and enjoy !
