Ingredients
- 1 cup cranberries
- 1 1/4 cups sugar (split up - 1/2 cup & 3/4 cups)
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 orange (juice and rind)
- 2 tablespoons melted butter
- 1 egg
- 1/2 cup chopped walnuts (or pecans)

Step 1
Mix cranberries with 1/2 cup of the sugar and set aside. Cut orange in quarters and put through food chopper. Put juice and rind into measuring cup and fill with orange juice (or boiling water) to make one cup. Finally, fold in the cranberries and nuts and pour batter into well-greased loaf pan. Bake for one hour in 350 degree oven. Turn out and cool on rack. Wrap in aluminum foil to store. Cuts better the second day.
