Ingredients

  • 4 cups shredded zucchini
  • 4 cups flour
  • 2 1/2 cups sugar
  • 1 1/2 cup oil
  • 4 eggs, beaten
  • 1 Tablespoon and 1 teaspoon vanilla
  • 1 Tablespoon cinnamon
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • NOTE: One cup nuts and raisins can be added.

Preparation

Step 1

Mix and stir all ingredients. Grease 2 loaf pans. Put mixture in pans. Bake at 325 degrees for 50 to 60 minutes.
