Lemon Chicken With Broccoli

Ingredients

  • 3 pkg chicken ramen noodle soup mix
  • 4 BLSL chicken breast halves
  • ½ c flour
  • ½ tsp salt and pepper
  • ½ c lemon juice, divided
  • 3 T olive oil
  • 2 cloves garlic, crushed
  • ¾ # fresh broccoli, cut in small pieces

Step 1

Cook soup according to directions. Take noodles out after cooking and keep warm. Reserve 1 ½ c broth.

Place chicken between 2 sheets of plastic wrap and pound to ¼ inch thickness.
Combine the flour, salt and pepper in a bowl.
Place ¼ c lemon juice in a bowl. Dip chicken in lemon juice then dredge in the flour.
Heat oil in skillet over medium high heat and add chicken. Cook 3 – 4 minutes or until chicken is browned on both sides.
Reduce heat to medium and add remaining ¼ c lemon juice, the reserved broth, the garlic, and the broccoli. Cover and simmer for 4 -5 minutes till broccoli is crisp tender. Service over hot cooked noodles.
