Tomato Basil Soup...easy

  • 4 tsp olive oil
  • 6 minced garlic cloves
  • 6 C chicken broth
  • 1 1/2 tsp salt
  • 6 14.5 cans diced tomatoes, drained
  • 1 onion, chopped
  • 4 C thinly sliced basil leaves
  • Whole basil leaves..optional



Step 1

Heat oil in a large saucepan over medium heat. Add onions and cook , stirring, until translucent. Add garlic, cook 30 seconds, stirring constantly. Stir in broth, salt and tomatoes, bring to a boil. Reduce heat, simmer 20 minutes. Stir in sliced basil.

Place half the soup in a blender, process until smooth. Pour soup into a bowl, repeat for remaining soup. Ladle soup into individual bowl. Garnish with whole leaves of basil, if desired.
