Fantastic green bean salad

Ingredients

  • 1 16 oz. package thawed frozen green beans cut
  • 1/2 pint green beans (cherry)
  • 3 T minced red onion
  • 2 T. White wine vinegar
  • 2 T. Water
  • 2 t olive oil
  • 1 T grated Parmesan cheese
  • 1/4 t salt
  • 1/4 t fresh or dried thyme
  • 1/4 t. Pepper
  • 1 clove garlic, minced
  • 1/2 red or yellow bell pepper cut into thin slices
  • Add artichoke hearts and or water chestnuts if desired

Preparation

Step 1

Cook green beans in salted water 3-4 minutes. Drain well.
Combine beans, tomatoes, and onions, toss gently. Whisk together vinegar and next 7 ingredients until well combined. Pour over bean mixture and toss to coat. Either serve at room temperature or chill.
