Fresh Tomato Pasta Dish

Ingredients
- 16 ounces dried pasta
- 4 fresh tomatoes cut in half, with seeds squeezed out
- 2 tablespoons extra-virgin olive oil
- 1 small clove garlic, peeled and minced
- 1/4 cup fresh basil leaves, in pieces
- 1/2 to 1 small red chile pepper, shredded
- 1/4 cup reserved hot pasta water

Preparation
Step 1
Follow package directions for cooking pasta. Meanwhile, use a large box grater to grate tomato pulp from the tomato halves. Place the tomato pulp in a large mixing bowl. Add olive oil, garlic, basil leaves and chile pepper, then mix well. When done, drain pasta and immediately mix with tomato sauce reserved pasta water. Serve immediately.
