BANANA-PINEAPPLE CREAM SQUARES

Ingredients
- 1 cup flour
- 1 stick margarine, melted
- 1/4 cup sugar
- 1/2 cup pecans
- 1 package (4-serving size) vanilla instant pudding and pie filling mix
- 1 3/4 cups milk
- 1/2 cup crushed pineapple, drained
- 1 (8 ounce) Cool Whip
- 1/2 cup toasted shredded coconut

Preparation
Step 1
Heat oven to 350 degrees. Mix flour, margarine, sugar and pecans. Press in bottom of ungreased 9" square pan. If the crust begins to bubble as it bakes, prick the bottom with a fork. Bake about 20 minutes or until golden brown. Cool completely. Make pudding mix according to package directions, using 1 3/4 cups milk & add pineapple; set aside. Place sliced bananas on crust. Spoon pudding mixture on top of bananas. Spread Cool Whip on top. Sprinkle with coconut. Refrigerate.
Variations: Before serving, garnish each square by drizzling top with Smucker's Pineapple Topping.
Vanilla Wafer Crumb Crust:
1 2/3 cups crumbs (about 36 vanilla wafers)
1/4 cup sugar
1/2 teaspoon vanilla
1/4 cup soft butter
Preheat oven to 350 degrees. In food processor, whiz cookies until reduced to crumbs. Add in sugar, vanilla, and butter and pulse to combine. Mixture should resemble wet sand. Pour into pan & gently spread into an even layer over bottom and sides. Press crumbs in firmly to create a tight crust. Bake about 8 minutes. Cool.
