Ingredients
- Makes 2/3 Cup
- 1 Shallot, minced
- 1 Garlic clove, minced
- 1 Tablespoon Olive Oil
- 3 Medium tomatoes, peeled seeded, and chopped
- 2 Tablespoons minced fresh basil
- 1/4 Teaspoon Salt
- 1/4 Teaspoon pepper

Preparation
Step 1
Sauté shallot and garlic in hot oil in a saucepan over low heat 1 minute. Add tomato, and simmer 15 minutes. Stir in remaining ingredients, and cook 2 minutes. Cool.
Process tomato mixture in a food processor until smooth, stopping to scrape down sides.
Prep: 10 minutes. Cook: 17 minutes
