- 1 tablespoon(s) olive oil
- 1 medium onion, finely chopped
- Kosher salt
- 1 pound(s) lean ground beef
- 1 can(s) (15-ounce) petite-cut tomatoes with green chiles
- 1 tablespoon(s) chopped chipotle in adobo, plus 1 tablespoon adobo sauce

Preparation
Step 1
Heat the oil in a large skillet over medium heat. Add the onion and 1/4 teaspoon salt and cook, covered, stirring occasionally, until tender, 6 to 8 minutes.
Increase the heat to medium-high. Add the beef and cook, breaking it up with a spoon, until browned, 4 to 5 minutes.
Stir in the tomatoes (with their juices), chipotles, and adobo sauce and bring to a simmer. Remove from heat.
