Lemon Loaf Cake

Ingredients

  • 1 box of yellow cake mix
  • 1 3.5ox pkg lemon gelatin
  • 3/4 cup H2O
  • 3/4 cup veg oil
  • 4 lg eggs slightly beaten
  • 1 1/2 sifted powdered sugar
  • 1/4 cup fresh lemon juice
  • 1/2 tspn grated lemon rind

Preparation

Step 1

In a mixing bowl combine yellow cake mix and lemon gelatin. Add H2O, oil and eggs. Beat 3 mins on med speed with elec mixer. Pour mixture into a greased 13" x 9" x 2" or a 9" x 5" loaf pan. Bake at 350 degrees for 30-35 mins or until done. Remove from oven and prick the top with fork.

Mix together powdered sugar, lemon juice and lemon rind. Pour over hot cake.
