Black bean, corn, avocado relish
Use this as a dip for tortilla chips, a side dish, or on a burger.

Ingredients
- 1- 15oz. can black beans (rinsed and drained)
- 2 ears of corn -cooked and shucked (frozen corn can be substituted)
- 3 tomatoes (seeded and diced)
- 1/2 green bell pepper -diced
- 2 avocados- diced (hint: use avocados that are somewhat firm-if they are too soft, the relish will be mushy)
- 1/4 cup red onion- diced
- 2 Tbls, olive oil
- 2 Tbls. red wine vinegar
- 1 clove crushed garlic
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cumin
- juice of 2 limes
- 3 Tbls. chopped cilantro * (optional)

Mix all ingredients together.
Can be made the day before.
