Ingredients

  • 1 box yellow cake mix (reserve 3/4 c.)
  • 1 stick margarine or butter
  • 1 egg, beaten slightly
  • 1 lg. can pumpkin
  • 3 eggs
  • 1/2 c. brown sugar, packed
  • 1/4 c. white sugar
  • 2/3 c. evaporated milk
  • 1 1/2 tsp. pumpkin pie seasoning
  • 34 c. reserved cake mix
  • 1/2 c. sugar
  • 1/2 stick margarine or butter

Preparation

Step 1

Blend together first 3 ingredients and pat into greased and flour pan. Mix together pumpkin, 3 eggs, brown sugar, sugar, evaporated milk and seasoning. Pour into formed crust. Work in together last 3 ingredients and sprinkle on top of pumpkin mixture. Sprinkle 1/2 cup nuts (walnuts or pecans) on top, if desired. Bake at 350 degrees for 55 minutes. Top with fresh whipped cream at serving.
