    tbls. lemon zest

    tbls. orange zest

    tblsp.parsley rough chop

    tsp. dill rough chop

  • salt pepper to taste

  • FISH IN PARCHMENT

    5-6oz.boneless skinless salmon fillets

  • half bulb fennel sliced thin

    small zucchini sliced thin

    shallot sliced thin

    oranges cut into segments

    tbls.citrus butter

  • salt pepper to taste

Directions

1-preheat oven to 400 2-combine ingredients for citrus butter 3-cut out 4 large ovals of parchment paper.brush softened butter along edges of paper. place fillet on one half of paper,salt and pepper to taste 4-top with fennel,zucchini,shallot and 3-4 orange segments.Put dollop of citrus butter on top and seal parchment by folding in half, roll up edges and twist ends. 5-place parchment packages on baking sheet 6-cook 10-15 minutes until parchment becomes puffy and slightly brown. from,The Chopping Block
