Ingredients
- Cake:
- 2 c. sugar
- 2 c. sifted flour
- 4 eggs
- 1 1/2 c. Wesson oil
- 1 t. baking powder
- 2 t. baking soda
- 1/2 t. salt
- 1/3 c. chopped nuts (pecans)
- 3 c. grated carrots
- 2 t. vanilla
- Icing:
- 1 box 10X sugar
- 1 t. vanilla
- 3 oz. cream cheese
- 1/2 stick margarine
- 1/2 c. chopped pecans

Preparation
Step 1
Mixx first 7 cake ingredients. Then add the last 3. Bake in 3 greased and floured 9-inch cake pans. Bake at 350° for 30-35 minutes. Let cool.
Mix all icing ingredients until smooth. Ice cooled layers.
