Scalloped Corn

  • 2 T butter
  • 1/2 c onion, chopped
  • 1/4 c diced red pepper (optional)
  • 2T flour
  • 1/4 t salt
  • 1/4 t dry mustard
  • 1/8 t pepper
  • 3/4 c milk
  • 16 oz. frozen corn, thawed
  • 1 egg, slightly beaten
  • 1/4 c corn flake crumbs



Step 1

Grease one quart casserole. Cook onion and pepper 3-5 minutes. Stir in flour, salt and pepper and mustard. Cook one minute. Stir in milk. Boil and stir. Remove from heat. Stir in corn and egg. In separate bowl combine corn flake crumbs and butter and sprinkle on top. Bake 40-45 minutes until center is set.
